Ripe avocado has a naturally smooth, cohesive flesh with very low fibre visibility. Mashed or blended, it sits on a spoon in a mounded shape and falls as a cohesive mass when tilted. The high monounsaturated fat content also increases caloric density, beneficial for malnourished dysphagia patients.

Safe Preparation

Use only fully ripe avocado (yields to gentle pressure, dark skin). Halve, remove stone, and scoop flesh. Blend or mash until completely smooth, removing any stringy fibres near the stone. Add a small amount of lemon juice to prevent browning. Test: a spoonful should mound on a plate and not pool or flow.

  • Never use underripe avocado — the flesh is waxy and fibrous, not Level 4 compliant.
  • Lemon or lime juice maintains colour and adds brightness without altering texture.
  • Avocado purée oxidises quickly — prepare immediately before serving or press cling wrap directly on the surface.
  • Blend with a small amount of yogurt or cream cheese for additional protein.
