IDDSI Level 4 (Puréed) foods are uniformly smooth with no lumps, require no chewing, and hold their shape on a spoon or plate. Pumpkin is naturally low in fibre compared to many vegetables and blends to an exceptionally smooth texture, making it an ideal Level 4 ingredient.

Safe Preparation

Steam or roast pumpkin until very soft. Remove skin and seeds. Blend in a high-powered blender until completely smooth, adding a small amount of warm liquid if needed. Do not add cream or butter in quantities that compromise cohesion. The purée should sit mounded on a plate and not spread or pool.

  • Roasting rather than boiling concentrates flavour and reduces water content, making it easier to achieve the correct mounded consistency.
  • Use the IDDSI Spoon Tilt Test: a correctly prepared Level 4 purée should fall off a tilted spoon in a cohesive mass, not drip or pour.
  • Chilling moulded purée for 15 minutes before plating helps maintain shape for appetising presentation.
