Gently stir-fried firm tofu broken into small soft pieces with sauce — an IDDSI Level 5 (Minced & Moist) plant-based protein option.

Natural IDDSI Level

Firm tofu crumbled into ≤4 mm pieces and cooked gently with sauce produces soft, moist particles that meet Level 5 criteria. The soy protein provides a complete amino acid profile, making this an excellent plant-based alternative to minced meat.

Safe Preparation

Drain firm tofu and crumble into pieces approximately 3–4 mm. Cook gently in a small amount of oil with soy sauce, adding water or stock to keep moist. Stir continuously to prevent sticking. The finished product should be soft, moist, and uniformly coated. Do not allow the tofu to brown or crisp.

  • Medium-firm tofu crumbles more easily than extra-firm and produces a softer final texture.
  • Season with soy sauce, sesame oil, and white pepper for Cantonese flavour.
  • Serve immediately — scrambled tofu dries quickly on standing.
  • Add finely minced spring onion (green part only, if soft enough) for colour and flavour.
