Well-steamed white fish (cod, tilapia, snapper, sea bass) flakes naturally into soft, moist pieces of approximately 10–15 mm that yield to gentle tongue-palate pressure. This meets IDDSI Level 6 criteria. All bones must be removed before serving.

Safe Preparation

Use boneless fillets or debone thoroughly before cooking. Steam over high heat for 8–12 minutes depending on thickness. The fish should flake easily when pressed with a fork. Serve with light broth or sauce poured over the top to maintain surface moisture. Do not pan-fry, grill, or bake — these methods create a firm, dry surface crust that does not meet Level 6.

  • Run your fingers firmly along the fillet to find and remove all pin bones before steaming.
