Ripe banana mashes into a smooth, starchy, cohesive purée with no visible fibres. It sits mounded on a plate, holds its shape on a spoon, and falls as a cohesive mass — meeting Level 4 criteria without any cooking or blending equipment required.

Safe Preparation

Use only very ripe bananas (brown-speckled skin). Mash thoroughly with a fork until no lumps remain. For maximum smoothness, blend briefly. A correctly mashed banana purée should hold its shape on a plate and not spread. Avoid adding excessive liquid — if it starts to pool, it may become Level 3.

  • Very ripe (over-ripe) bananas are sweeter, softer, and easier to mash to a smooth consistency.
  • Combine with smooth yogurt for added protein and a creamier texture.
  • Prepare immediately before serving — banana oxidises and turns brown quickly.
  • A squeeze of lemon juice slows oxidation without significantly altering flavour.

Is banana purée suitable for elderly dysphagia patients with diabetes?

Ripe banana has a moderate-to-high glycaemic index (GI 48–62) and should be consumed in controlled portions by patients with diabetes. Discuss portion sizes and frequency with the patient's dietitian. Combining banana purée with protein (yogurt, nut butter purée) can lower the overall glycaemic response of the serving.
