Braised Firm Tofu

Firm tofu braised in light broth until soft and moist — a reliable IDDSI Level 6 food that provides plant-based protein with a satisfying, savoury flavour suitable for elderly patients.

Natural IDDSI Level

Fresh firm tofu, when braised or simmered in broth for 10–15 minutes, softens sufficiently to meet IDDSI Level 6 criteria. It can be broken into pieces ≤15 mm with minimal force and requires gentle chewing. Raw firm tofu is too resilient and does not meet Level 6 without cooking.

Safe Preparation

Cut firm tofu into cubes of approximately 12 mm. Simmer in light broth (soy sauce, ginger, stock) for 12–15 minutes. The tofu should absorb broth and become visibly softer. Test by pressing a cube with a spoon — it should compress easily. Serve with broth poured over to maintain moisture.

  • Simmering in flavoured broth improves palatability and adds protein from the broth itself.
  • Press the tofu briefly before cooking to remove excess water — this helps it absorb broth better.
  • Tofu braised overnight is often softer and more flavourful — good for meal prep.
  • Avoid deep-fried tofu (tofu puffs) — the fried outer layer does not meet Level 6.
