IDDSI — The International Dysphagia Diet Standardisation Initiative
IDDSI defines 8 universal levels for texture-modified food and thickened drinks — the global standard for safe swallowing in dysphagia care. SeniorDeli is a T/SATA 094-2025 Participating Drafting Unit and provides clinical-grade implementation across Hong Kong RCHEs.
What is IDDSI?
The IDDSI framework provides a common terminology and rigorous testing methodology so clinicians, caregivers, and food producers worldwide describe the same texture the same way. Levels 0–4 cover drinks (Thin → Extremely Thick) and Levels 3–7 cover foods (Liquidised → Regular / Easy-to-Chew). Each level is defined by objective tests: fork drip, flow, spoon tilt, finger-press, and the IDDSI Funnel.
