Selecting the right texture-modification product is one of the most practical — and most consequential — decisions a care home dietitian, kitchen supervisor, or family caregiver makes. The wrong product, or the right product used incorrectly, can mean the difference between a safe, nutritious meal and a serious aspiration event.

Understanding the Four Product Categories
SeniorDeli's product range is organised around the four main texture-modification challenges in dysphagia care:

Each product category addresses a different challenge and targets different IDDSI levels.
Clear Thickener: For Drinks at IDDSI Levels 1–4
SeniorDeli Clear Thickener is a xanthan gum-based thickener designed to increase the viscosity of any drink — water, tea, juice, milk, soup, cordial — to a precise IDDSI level. It dissolves quickly and remains clear, preserving the visual appeal and flavour of the drink.
Typical use: Thickening water and tea for residents with IDDSI Level 2 or 3 prescriptions from the speech therapist.
Key advantage: Unlike starch-based thickeners, xanthan gum thickeners do not continue to thicken over time (a phenomenon called retrogradation), making them more predictable in care home kitchen environments where drinks may sit for varying periods before service.
Dosing: Use the published SeniorDeli dosing table (available at seniordeli.com/products/clear-thickener) which specifies the correct dose per 100ml for each drink type at each IDDSI level. Do not estimate — always measure.
Food Gellant: For Pureed and Minced Foods at IDDSI Levels 4–5
SeniorDeli Food Gellant allows care home kitchens to create smooth, shaped pureed foods that meet IDDSI Level 4 (Puréed) specifications, and can be adjusted to produce moist, particle-appropriate textures at IDDSI Level 5 (Minced & Moist).
Typical use: Recreating recognisable food shapes — a moulded fish shape, a carrot form — from pureed protein and vegetable mixtures. This preserves the dignity and familiarity of mealtimes for residents who require texture modification.
Key advantage: Maintains shape and stability across service temperatures typical in care home dining environments, reducing the risk of structural collapse between kitchen preparation and tableside service.
Cold Gellant: For Cold or Ambient-Temperature Items at IDDSI Levels 4–5
SeniorDeli Cold Gellant is designed for items that are served cold or at room temperature — desserts, fruit purées, cold soups, and thickened supplements. Unlike Food Gellant (which is heat-set), Cold Gellant sets and maintains texture without requiring heat.
Typical use: Creating smooth, stable fruit purées, yogurt-based desserts, and cold thickened supplement drinks for residents who require IDDSI Level 4 consistency in cold items.
Food Softener: For Whole and Chopped Foods at IDDSI Levels 5–6
SeniorDeli Food Softener is used to tenderise whole or chopped meats, vegetables, and other solid foods to IDDSI Level 5 (Minced & Moist) or Level 6 (Soft & Bite-Sized) without using a blender or food processor. The food retains its original appearance and shape — a whole piece of chicken breast or a carrot slice — but can be broken apart with fork pressure or chewing.
Typical use: Preparing Level 6 meals for residents who can chew soft foods but cannot manage regular textures. Common applications include chicken, pork, beef, fish, root vegetables, and leafy greens.
Key advantage: Retains food appearance and form, which is important for resident dignity, appetite stimulation, and social mealtime experience. Avoids the institutional appearance of heavily pureed meals.
How to Choose the Right Product

Multiple products are often used together: a resident on IDDSI Level 5 may receive a softened main course (Food Softener), a shaped pureed side dish (Food Gellant), and a thickened drink (Clear Thickener) at the same meal.
