SoftMeal.org: Free Dysphagia Recipe Library Now Live

SoftMeal.org is now live as a free, publicly accessible dysphagia recipe library and clinical resource platform. The site launches with over 500 recipes across all IDDSI texture levels (0–7), available in English and Traditional Chinese (Cantonese), with simplified Chinese and additional language versions planned.

What Is SoftMeal.org?

SoftMeal.org is SeniorDeli's open knowledge platform for dysphagia nutrition. It exists to make high-quality, clinically grounded dysphagia recipe and nutrition content freely available to family caregivers, care home kitchens, speech-language therapists, dietitians, and healthcare educators — without requiring a subscription or purchase.

Every recipe on the platform has been reviewed and classified by a registered dietitian or speech-language therapist against IDDSI texture criteria. Recipes include preparation time, equipment required, nutritional information per serving, and modification notes for common dietary restrictions (low-sodium, diabetic-friendly, halal).

500+ Recipes Across All IDDSI Levels

The launch library covers:

IDDSI Level 3 (Liquidised / Moderately Thick): 60+ recipes including Cantonese congee variants, pumpkin soup, and smooth tofu custard.

IDDSI Level 4 (Purée): 120+ recipes including fish purée with ginger, minced pork congee base, and steamed egg with broth.

IDDSI Level 5 (Minced and Moist): 150+ recipes including soft chicken with sauce, braised minced beef, and soft dim sum adaptations.

IDDSI Level 6 (Soft and Bite-Sized): 180+ recipes including soft-cooked fish fillet, braised tofu, and tender vegetables with sauce.

Thickened liquids (Levels 1–2): 30+ beverage recipes optimised for thickener addition, including Cantonese herbal teas, congee water, and fruit-based drinks.

Bilingual Design

All recipes are available in English and Traditional Chinese. The bilingual design reflects the reality of Hong Kong care homes: dietary instructions may be written in English by clinical staff and read in Chinese by kitchen workers. Photo-illustrated step-by-step guides are provided for all recipes, reducing dependency on language literacy.

SeniorDeli Product Integration

Where appropriate, recipes indicate which SeniorDeli products (Clear Thickener, Food Gellant, Cold Gellant, Food Softener) can be used to achieve the specified IDDSI texture level. This is intended as guidance, not as advertising — all recipes can be prepared using equivalent products from other certified suppliers.

Community Recipe Submission

SoftMeal.org welcomes recipe submissions from speech-language therapists, dietitians, care home chefs, and family caregivers.
